Matcha Mousse

Matcha Mousse

Ingredients:

  • 1 cup heavy cream
  • 2 tsp gelatin powder
  • 2 tbsp water
  • 3 egg yolks
  • 1/2 cup sugar
  • 2 tbsp matcha powder
  • 1/2 cup milk

Instructions:

  1. Whip heavy cream to stiff peaks. Chill in the refrigerator.
  2. Sprinkle gelatin over water and let bloom for 5 minutes. Gently heat until gelatin dissolves. Set aside.
  3. Whisk egg yolks, sugar, and matcha powder in a bowl. Heat milk just to a simmer and gradually whisk into the egg mixture.
  4. Cook the mixture over low heat, stirring constantly until it thickens. Remove from heat and stir in gelatin mixture.
  5. Cool to room temperature, then fold in whipped cream. Pour into serving dishes and refrigerate until set, about 3 hours.
