Ingredients:
- 1 ½ cups milk
- 4 eggs
- 1 cup all-purpose flour
- 2 tbsp matcha powder
- 3 tbsp melted butter
- 2 tbsp sugar
- 1 tsp vanilla extract
- 2 cups heavy cream
- 1/2 cup powdered sugar
Instructions:
- In a blender, combine milk, eggs, flour, 1 tbsp matcha, melted butter, sugar, and vanilla extract. Blend until smooth. Let the batter rest for 1 hour.
- Heat a non-stick skillet over medium heat. Pour a small amount of batter to form a thin crepe. Cook until the edges lift from the pan, flip, and cook for a few more seconds. Repeat with remaining batter.
- Whip the heavy cream with powdered sugar and the remaining matcha powder until stiff peaks form.
- Assemble the cake by layering crepes with a spread of matcha cream between each layer. Finish with cream on top and dust with matcha powder.
