Matcha Muffins

Ingredients:

  • 2 cups (240g) all-purpose flour
  • ¾ cup (150g) granulated sugar
  • 2 ½ teaspoons baking powder
  • 2 tablespoons matcha powder
  • ½ teaspoon salt
  • 1 cup (240ml) milk
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, matcha powder, and salt.
  3. In another bowl, mix together the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
