Ingredients:
- 1 cup (120g) powdered sugar
- ¾ cup (75g) almond flour
- 2 tablespoons matcha powder
- 2 large egg whites, room temperature
- ¼ cup (50g) granulated sugar
- Filling: Your choice of matcha buttercream or white chocolate ganache
Instructions:
- Sift powdered sugar, almond flour, and matcha powder together.
- Beat egg whites until foamy, gradually add granulated sugar, and beat until stiff peaks form.
- Fold dry ingredients into egg whites gently.
- Pipe 1-inch rounds onto a lined baking sheet. Tap to remove air bubbles and let sit for 30 minutes.
- Bake at 300°F (150°C) for 17-20 minutes. Cool on the sheet, then fill with chosen filling.
